A test by which the presence of sugar is shown by the changing of color of the liquid to be tested through yellow, red brown, and deep brown to black, caused by boiling with enough caustic soda or potash solution to give a strong alkaline reaction. The value of the t. is lessened by the fact that other substances produce a like result.
